Minimal Protein Salads Ep.2: Carrot, Almonds & Avocado

 
Day two of the series with @sun.and.seed 🌻

Another minimal, protein-focused build — just a few ingredients, each doing real work.

This one starts with shaved carrots 🥕. Sweet, crisp, and surprisingly structural when sliced thin. They stop behaving like a side vegetable and start acting as the backbone of the salad.

For crunch and protein: activated almonds. Proper bite, clean flavour, and enough fat and protein to give the bowl some strength.

Then avocado, bringing creaminess and balance to the sharper edges.

The dressing pulls everything together: macadamia butter from @sun.and.seed turned into a silky dressing. Macadamias are naturally rich and smooth, so they coat the carrots beautifully without feeling heavy, giving the salad depth with very little effort.

Finished with fresh chives for that gentle oniony lift that sharpens the whole bowl without overpowering it.

No complicated technique.
No ingredient overload.
Just texture, structure, and fats doing their job.

Minimal salads only work if every ingredient earns its place.
