Second in my series with @jonestrustyourgut, and this one leans into raw crunch and sharp contrast. 🥗

Shaved raw parsnip, finely chopped fennel, and sweet green peas, topped with Welsh pickled cucumber from @jonestrustyourgut and dressed with a simple mix of Jones vinegar, pistachio butter, and extra virgin olive oil from @sun.and.seed.

Fresh, crunchy, creamy, sharp — and proof that a few raw ingredients can still make a bowl feel complete.

Topped, as always, with good appetite.
